Find out more about the Domaine de La Périnade

The Domaine de La Périnadewas created in the 1830s. It covers 50 hectares, including 17 of vines, next to Carcassonne between the Canal du Midi and the Fresquel river. Currently led by the 6th generation of the Arnal family, the orientations of Domaine de la Périnade have been modified with two concerns at heart: quality and the environment.

Quality: Almost everything has been changed, from the size to the way of harvesting, including the creation of a particular cellar and the arrival of a talented oenologist, Mr. Claude Serra. Only 20 to 30,000 bottles are produced each year, they are the result of a rigorous and uncompromising selection within the plots and right through to the final assembly.

Environment: The estate has been converted to HVE (high environmental value), for the mildest possible and otherwise virtuous impact of the activity on the environment.
The estate has been officially HVE certified since 2021.
These new directions allow the estate to bring out through their vintages the most beautiful expressions of their terroir and a uniqueness that delights their prestigious clients, who have become their best ambassadors, such as Crazy Horse Paris, Pouliche and Café de Luce. by Amandine Chaignot, Amourette, or the very famous Lucas Carton house.

Nitrogen inerting

Nitrogen for better wine preservation

Since the 2020 vintage, our wines have benefited from this nitrogen inerting technology.

This step occurs during the bottling process.

In practice, a drop of liquid nitrogen is injected into the bottom of the bottle to replace the oxygen with a neutral gas, thus protecting the wine from oxidation. Designed to ensure better preservation of white or rosé wine, this drop of liquid nitrogen instantly transforms into a protective gas.

Nitrogen inerting, a state-of-the-art process

To achieve this particular bottling process at Domaine de La Périnade, we called upon an external service provider specializing in the use of nitrogen in winemaking. Completely odorless and colorless, nitrogen does not dissolve in the wine and does not alter its aromas.

Rendering the naturally occurring gas in the bottle inert reduces the risk of wine spoilage due to oxygen. This allows the wine to retain its properties and its taste to remain unchanged over time, and it also allows us to limit the use of sulfites.

New season, new harvest, and soon, a new vintage

The entire team at Domaine de la Périnade has been ready to go for the past few days. We're testing and analyzing the grapes daily: the weight of the berries, the sugar level, the acidity…

Rain made several appearances, at opportune moments and with significant intensity.

This all looks extremely promising!

The vineyards

The late frosts that made headlines for several weeks did not spare our vineyard: fewer grape bunches, some vines did not survive and will have to be replaced…

A green harvest was necessary to homogenize the ripening between the bunches that survived the frost and the second shoots which were very late.

A complicated spring, but a summer that allowed the remaining grape bunches to develop optimally and a quality that will undoubtedly be reflected in the 2021 vintage.

The grape harvest

The grape harvest has been underway for 10 days.

Some plots are harvested during the day, while the grapes vinified to make rosé are done at night when the temperature is lowest in order to preserve quality and aromas but also to facilitate the winemaking process which begins with cooling the press juices.

To date, the harvest is still ongoing, but the Grenache is in the vats, its fermentation has started, and its color and aromas are already a source of pride for us!

The cellar

Our private cellar, in which we are making wine for the 2nd year, is finally ready after some improvements and adjustments based on our experience gained in 2020.

The equipment was overhauled, tested, and restarted with water filling simulations…

It's better to detect a potential problem beforehand than to have a wine leak in the middle of the harvest…

We are all here, the whole Arnal family: Jean-Denys, Stéphane, Charles, Christine and Denisse, as well as our 2021 harvest mascot: a little tiger or rather a kitten who has adopted our cellar and who closely monitors the different stages of the winemaking of our rosé.

The 2021 vintage will be bottled after vinification on lees in our temperature-controlled tanks, with the advice of our oenologist, Claude Serra.

The bottles won't be available until next April; but rest assured, we still have stock of the 2020 vintage in rosé and white, just as good as ever... Attention wine lovers!
